Blossom honey is collected by the bees in June, July and August from the tree
blossom and flowers. This is a clear, runny, golden honey with a less sweet but
complex flavor which varies throughout the season and from year to year depending
on weather conditions.

The nectar from the June blossom (apple tree, cherry, honeysuckle, peachy flowers)
tends to make a lighter honey with herby undertones. In July the honey is richer and
more viscous whilst the August blossom honey has a slightly minty taste from the
bees foraging on lime tree nectar.
