The production of thyme honey is estimated to be about 10% of the total
honey
production in Greece.
The blossoming of thyme takes 30-40 days depending on the terrain and
weather
conditions.
The best production areas of thyme honey are the Greek islands, Crete,
Kythira and
Dodecanese.

Taste: The honey has a pleasant taste, but sometimes, because of the high
concentration of fructose, leaving a burning sensation in the mouth.
Aroma: Very aromatic honey.
Color: Usually light amber. (The honey of Attica and the Cyclades is lighter
than the
honey of Crete and the Dodecanese which is dark orange.)
Crystallizing: This honey sugarcoats in 6-18 months.
Nutritional value: The honey has toning and antiseptic properties and it is
also
suitable for the prevention and treatment of infectious, digestive and
respiratory
diseases. It is rich in metals such as copper and iron, and contains boron.
