There are two types of heather, the spring and autumn (or sousoura) and
are two
of the most important bee plants of Greece. The difference between the
two types
of heather honey is in taste and color.

Taste: The spring heather is tastier than the autumn but generally it has a
characteristic strong taste.
Aroma: Characteristic, delicate aroma.
Color: Dark red the autumn heather and lighter the spring heather.
Crystallizing: Because of the high natural content of glucose, the heather
crystallizes very quickly (in about 1-3 months) and so it is not suitable for
mixing
with other honeys and creating commercial types (blends). This honey also
sours
more easily than other types of honey, because it has high humidity and
high
content in sugar fungi.
Nutritional value: The heather, especially the autumn one, is a very
nutritious
honey and very tonic for the human body, because it contains dozens of
natural
nutrients, vitamins, enzymes and amino acids, so it is sold mainly in health
food
stores.
